Quarterly Recipe: Healthy Shamrock Veggie Skewers

SHAMROCK VEGGIE SKEWERS

Ingredients:
- Assorted green vegetables cut into bite-sized pieces (broccoli, zucchini, cucumber, sugar snap peas, snow peas, green peppers, etc.)
- Green peppers (for shamrock)
- Wooden skewers
- Dip of your choosing
Directions:
Thread assorted green veggies onto wooden skewers, leaving enough room on top to finish each with a shamrock-shaped pepper.
To make the shamrock peppers, you could either cut green peppers with a shamrock-shaped cookie cutter or use a sharp knife to cut out your shape.
Thread one shamrock pepper onto the top of each vegetable skewer to finish.
Serve with hummus or a reduced-fat dip.
